Gaminess refers to the distinctive flavor and aroma of wild meat, particularly venison and other game meats. This unique taste is influenced by factors such as the animal's species, diet, age, and processing method. Cooking techniques like marinating, using spices, and slow cooking can help reduce the strong gamey taste or enhance its flavor.

In Matsuno Town, there is a facility called "Matsuno Gibier" that processes, manufactures, and sells high-quality domestic venison. The deer are harvested in the Matsuno area and processed at the town's designated facility, ensuring cleanliness and precision. The skilled craftsmen carefully butcher and prepare the meat with meticulous attention to detail.

Gaminess（ゲーミネス）とは、「獣臭さ」や「野生味」を意味し、主に野生動物の肉、特にシカ肉などのジビエに特有の風味や香りを指します。この独特の風味は、動物の種類や食性、年齢、処理方法によって生じます。調理の際には、マリネやスパイスの活用、スロークッキングなどの方法で獣臭さを和らげたり、風味を引き立てたりすることができます。

松野町には「まつのジビエ」という工場があり、上質な国産鹿肉ジビエを加工・製造・販売しています。松野町周辺で捕れた鹿を町指定の加工施設で清潔に、シビアに、そして丁寧に解体・精肉し、職人のきめ細やかな技術で処理しています。
